Slightly tangy and sweet, guava and pineapple combined help create an explosion of flavor, taking these lovely little corn fritters from delicious to simply irresistible.
To create enough dipping sauce for up to 8 people...
Simply mix 5 tablespoons of tinned guava and 3 tablespoons of crushed pineapple in a saucepan over medium heat. Stir occasionally until it has melted into a sauce. Pour into ramekins and allow to cool slightly before serving.

Many recipes for Puerto Rican Corn Sticks use water in the batter. But if you'd like your batter to be richer and to have a fuller flavor, we recommend using coconut milk or milk instead! If you are leaning towards serving your Sorullitos as a sweet dish, the milk or coconut milk tends to be the better option.
How to freeze Puerto Rican Corn Sticks
While Sorullitos De Maiz are best eaten right after they’ve been cooked, they do freeze well if you wanted to prepare a large batch to cook some later.
Once you’ve made the dough and rolled them out into the little logs, just place them on parchment paper, ensuring that they do not touch each other. Put them into the freezer, laying flat.
Once frozen through, transfer them to a freezer bag. When you are ready to cook them, remove the desired quantity from the freezer, drop into hot oil and cook as you would normally.
